In his instructional video, Chef Thomson cautioned against the common practice of slicing through the core of the pepper, emphasizing its inefficiency that leads to seed dispersion and wastage. He highlighted the added challenge of removing the pepper’s pit due to its curved shape causing instability during slicing.

Proposing a superior technique learned from fellow chefs, Chef Thomson’s method involves first trimming the top and bottom sections of the pepper to expose the hollow center. Subsequently, he slices down one side of the pepper and rolls it on the knife, facilitating easy removal of the core without any seed spillage.

By following this approach, Chef Thomson ensured that no seeds fall onto the cutting board, maintaining a clean workspace throughout the cutting process. The pepper is then halved lengthwise, excess white parts are removed, and the remaining sections are finely chopped into uniform sticks before dicing.

“This method not only results in consistent slices but also produces a better and more uniform product, saving time through enhanced efficiency,” remarked Chef Thomson. Additionally, he demonstrated how to handle the trimmed top and bottom sections by easily removing the green stalk and shaping them to match the rest of the pepper, minimizing food wastage.
