Preparing a traditional balti at his restaurant Shababs in Birmingham, Zaf explained that the genuine article is cooked swiftly over intense heat in a specific metal dish. In contrast, contemporary versions often involve simmering curry in bulk before transferring it to balti-style vessels for presentation.

The essence of a balti lies in its rapid preparation, requiring a thin-pressed carbon metal dish that evenly distributes heat. This unique cooking vessel, with a flat base and handles for stability, allows flavors to meld into the metal, enhancing the taste over time.

With a legacy dating back to 1987, Shababs holds a significant place in Birmingham’s Balti Triangle, the historic birthplace of the balti dish fifty years ago.
